What happens to an oat before it becomes the whole grain that reaches your breakfast bowl?
In Season 3, Episode 2 of Trust Your Oats, Trust the Hull, Dale Tenhulzen explores one of the least discussed but most important stages of oat processing: removing the tough outer hull. An oat arrives from the field with an inedible protective casing that represents roughly 28–32% of the kernel, while the nutritious groat inside makes up the portion ultimately used for food.
The episode takes listeners inside the dehulling process, explaining how impact dehullers separate the hull from the groat and why millers must carefully balance efficiency against broken or lost grain. Dale also explains why oats generally remain whole grains after processing and how steaming and kilning help prevent the natural fats in oats from becoming rancid.
But removing the hull has another important effect. Because the outer surface is exposed to field conditions, fungal contaminants and mycotoxins can become concentrated there. Research shows that dehulling can substantially reduce these contaminants—but it cannot eliminate every food safety risk, and it does nothing to remove gluten contamination from wheat, barley, or rye. That is why prevention through the Purity Protocol remains essential.
Finally, Trust the Hull looks at what happens to the nearly three pounds of hull generated from every ten pounds of harvested oats, from traditional uses such as fuel and livestock bedding to emerging research into biofuels, hydrochar, fermentation, and food applications.
